Cupcake Week: Sushi Mini-cakes

Let me tell you a secret. I don't like sushi. I really don't. But I have no problem eating this sushi.

Start with some mini cupcakes.

Frost them using white frosting. You'll need to frost the sides too. It'll be messy. There's no way around it.

To make a roll, wrap a green Fruit Roll-Up or green Fruit By the Foot to serve as nori. I actually had a hard time finding the green fruit rolls.

For rice, I used white sprinkles. These were tricky to find, but coconut would be a decent stand-in. But the white sprinkles are perfect.

Carefully apply the rice to the top. I just dunked it into the sprinkles.

Now, decide what kind of sushi you want to make. Originally, I was trying really hard to make it accurate. But the lime green fruit roll up pretty much ruined that. So to make a California-ish Roll, I used gummy works and a piece of mini marshmallow.

For Roe, I used Twizzler Pull and Peels chopped fine (thanks to Rykert for coming up with that idea).

Another variety of roe was made using orange nonpareils.

After gathering lots of supplies and getting covered in frosting, you'll have sushi cupcakes.

It's cute. Though no where near asauthentic as the hamburgers thanks to the flourescent colors of the candy and Fruit Roll Ups. This isn't my first foray into mock sushi. A few years back, Rykert and I made candy sushi using rice krispie treats, gummy worms, and fruit roll-ups. The concept is the same, and it's far easier to make and eat than these little cupcakes. But they are cute.
