Harvest.

I spent the weekend at my parent's. When I got home last night, I spent some time in the garden pulling a few weeds, checking the germination on the next round of bush beans, and trying to wish a tomato red. A few beans (there will be buckets full by the end of the week), a few random banana peppers that fell off the sad looking pepper plants, and one lonely cucumber. Cucumbers are tricky little things that hide under all that foilage. I thought it was about time but missed this one on the first two looks through the vines. It wasn't until we were on our way up to the house that I spotted this one.

So, what does one do with a single cucumber? Any ideas?

Add it to a salad or just eat it as is and enjoy.

I found your blog the other day looking for other Iowa City residents that are crafty and now you post about cucumbers, one of my all time favorite veggies. Hi :)

1.Go to Oasis Falafel and buy hummus. Slice up cucumber and dip in hummus like the cucumber is a pita chip. Delicious.

2.Slice up cucumber and put in ice water. Drink up. Refreshing!

3.Shred up cucumber and carrots, blot a bit, and use it as a sandwich topping or on tacos. It sounds weird but is crunchy delicious!

I love to slice them up, touch of sea salt and some nice italian dressing...yum! A bit of cheese and I have lunch.

I eat cucumber in salads all the time. I would suggest a watermelon, cucumber, red onion, spinach and feta salad with a simple dressing or none at all. That is essentially what I plan to have tonight except, I didn't get the spinach I wanted since the store was out and I forgot the cucumber. It will be mixed baby greens instead and maybe a tomato thrown in.

I just made a cucumber salad yesterday:
1 medium cucumbers, peeled and diced, deseeded
Dressing:
Mix following together and pour over cucumber.
1 c plain low-fat yogurt
1/4 cup reduced-fat sour cream
2 tablespoons diced onion
1/2 clove garlic, minced
3/4 teaspoon dried dill weed
salt and pepper to taste
Refrigerate an hour or two before serving.

I love beaniesue's idea -- using slices of cuke as the chip to dip into Oasis' hummus is definitely the way to go!

I'm also a big fan of thinly sliced cucumber tossed with crushed red chili pepper and rice vinegar and kosher salt.

You are all fabulous! Oh the ideas. I'm not sure how we'll eat it tonight, but you've given me all sorts of ideas for the many immature cucumbers our single plant is currently producing.

Muddling a cucumber in your drink is all the rage in Portland. I've had a viscious whiskey ginger with muddled cucumbers many times at this asian fusion place. And this recipe is. so. goood.

We canned our first batch of banana peppers last night. I think we are going to do our first batch of pickles tomorrow. It hasn't been a great year for cucumbers for us.
