Baking.

My favorite part of the Christmas season is the baking. It's my excuse to bake up more stuff then we could ever eat, try out different recipes, and use pounds and pounds of butter. If I offer you one of my baked goods, do not say that you are on a diet. And if you do say something like that, duck.

Here's the rundown, with recipe links where possible. Please note that I am not a food stylist or photographer. In addition, the lighting conditions here in Iowa are miserable today so that's not helping matters.
classic shortbread
This is Scottish shortbread. The recipe is here. The only modification I made was to cut the cookies with a scalloped edge cookie cutter and then drizzle with melted milk chocolate. I like this recipe, because of the brown sugar.

chocolate peppermint crunch
Chocolate Peppermint Crunch Cookies. This was my own creation based on some cookies my mom purchased. You basically dip the top of a chocolate wafer in almond bark and then dip in crushed peppermint candies or candy canes. Not exactly a recipe, but I posted the formula here.

Chocolate Mint Layered Candy. The recipe is here. This looks much harder than it actually is to make. I used a creme de menthe flavor rather than peppermint.

Peanut Butter Cup Tassies. The recipe can be found here.

Chocolate Caramel Tassies. The same idea as the recipe above. I used this recipe as the cookie base. I put small balls of dough into a mini muffin pan. Once they were removed from the oven, I immediately pressed an upside down Rolo into each.

Chocolate Mice. Now, if you look closely you will be able to make these without reading any further. If you like a little more instruction, then the recipe can be found here.

I also made toffee (not my best batch) and chocolate chip cookies. The chocolate chip cookies aren't exactly Chrstmas-y, but they are Rykert's favorite so I obliged.

Wow - where do I sign up to be a recipient for all that great looking chocolate? The mice are really cute. Thanks for sharing all the wonderful recipes.
